Peanut Butter Rice & Curried Lentils

Yesterday we couldn't think of anything for dinner so I tried a few new things. The Peanut Butter Rice was really good, but could of used a little more peanut butter. I will be posting it with a few modifications. The lentils was okay, but I think we should have cooked it a little longer.

Peanut Butter Rice
cooked 1 1/2 cups of your choice of white rice
1/4-1/2 cup of smooth peanut butter
2 tbl soy sauce
1/2 cup water
2 tsp apple cider vinegar (or any vinegar that you may have)
2 tsp sugar
1/2 tsp garlic powder
dash of salt


When rice has 5-10 minutes left to cook start making the peanut sauce. Add all ingredient into a small sauce pan and heat on medium until it is all combined. Make sure to stir while it is heating up. Once it is heated and rice is done add sauce to the rice. Mix until rice is fully coated.


Curried Lentils

1 1/2 cups of brown lentils
3 cups of water
1 can of diced tomaotes
2 tsp of minced garlic
2 celery stalks chopped
1 yellow onion chopped
1 1/2 tbl curry powder
1 tsp salt.

Cooked lentils, onion, tomatoes, garlic, and celery in water for 35 minutes. Add curry and salt continue cooking until the lentils become soft.

When I made this I don't think I cooked it long enough, so make sure not to serve until the lentils are very soft. It was okay, of course my husband and brother had to have crackers with it, but at least they ate it!

Lentils & Spinach

Made this the other night for my husband and myself. He didn't like it much because he's not a huge fan of spinach, but I love it!

Serves two people.

1 yellow onion chopped
1 teaspoon of olive oil
1/2 a vegetable bullion cube
2 cups of water
1/2 cup brown lentils
2 teaspoons of cumin
2 teaspoons of garlic powder
1/2 a bag of organic spinach (you can use a box of frozen spinach instead)

Saute the onion in olive oil in a pot. Add water and lentils. Add spices. Bring to a boil and let cook for 30-35 minutes or until the lentils are softened. After the lentils are cooked, add the spinach and simmer for a few minutes until the spinach is cooked to your liking.

Serve and enjoy!
